Chicken thighs a la Ujarrás

In a bowl combine all the marinade ingredients – including the onion – and season to your taste; when ready, add the chicken and cover, leave to rest and refrigerate for 1 hour.

Get the rest of the ingredients ready for cooking.

PREPARATION

  • Preheat the frying pan at medium heat.
  • When ready, add the chicken and cook on one side for 5 minutes and turn once to cook the other side for another 5 minutes.
  • When turning the chicken add the wine for flavor, let it reduce; add the strawberry marmalade and the whipping cream. If you use sour cream, add it after the wine has reduced and turn off the heat, add the sour cream and mix. The idea is to simply warm the cream, if left on heat for too long, the sauce will loose consistency.
  • Let the sauce reach the right consistency and season with salt and pepper.
  • Check the seasoning and serve immediately
  • Garnish with white rice or mashed potatoes … remember that the purpose of the sauce is that it be absorbed and enjoyed; you can also use bread to accompany the dish.
  • Enjoy your meal!
